Pancake Batter (Yeasted Base)

  • 1 tsp active dry yeast

  • 1 cup of all-purpose flour

Instructions:

  1. In a mixing bowl, combine warm water and buttermilk.

  2. Sprinkle in the yeast and let it bloom for 5–10 minutes until foamy.

  3. Gradually add the flour, stirring until the mixture looks like lumpy cottage cheese.

  4. Cover and let rest in a warm spot for 30–45 minutes to activate and slightly rise.

Dry Mix

Ingredients:

  • 1cup all-purpose flour

  • 1 tsp kosher salt

  • 2 tbsp sugar

  • 1 tsp baking soda

Instructions:

  1. In a separate bowl, whisk together the flour, salt, sugar, and baking soda.

Wet Mix

Ingredients:

  • 2 large eggs

  • 2 tbsp vegetable oil

Instructions:

  1. Beat the eggs and oil together in a small bowl.

Combine All

  1. Combine the yeast mixture and egg-oil mixture until a thick, slightly bubbly batter forms.

  2. Add the dry mix into the yeasted mixture and stir until just combined (lightly fold in the flour).

  3. Let the batter rest for another 10 minutes before cooking.

Maple Honey Syrup

Ingredients:

  • 1/2 pound unsalted butter (2 sticks)

  • 1 tbsp soy sauce

  • 1/2 cup maple syrup

  • Pinch of salt

  • 2 tbsp water

Instructions:

  1. In a saucepan, melt the butter over medium heat.

  2. Stir in soy sauce, maple syrup, salt, and water.

  3. Simmer gently for 3–5 minutes, whisking until glossy and emulsified.

  4. Keep warm until serving.

Flavored Butter

Ingredients:

  • 1/2 pound unsalted butter (2 sticks), softened

  • 2 tbsp maple syrup

Instructions:

  1. In a small bowl, mix softened butter and syrup until fully combined.

  2. Spoon onto plastic wrap, roll into a log, and chill. Slice and serve over pancakes.

Berry Compote

Ingredients:

  • 1 cup blueberries

  • 1 cup chopped strawberries

  • 3 tbsp sugar

  • 1 tsp cornstarch

  • 1 tbsp water

Instructions:

  1. Combine fruit in a bowl and sprinkle in sugar and cornstarch. Stir and allow mixture to sit until juices from the fruit are released.

  2. In a saucepan over medium heat, combine and simmer until thickened (about 5–7 minutes), stirring occasionally.

  3. Let cool slightly before serving.

To Serve:
Stack warm pancakes, top with a slice of flavored butter, drizzle with maple honey syrup, and spoon over the berry compote.
